Queensland home cooks and foodies with flair are being encouraged to share their Australia Day recipes for the chance to win a gourmet getaway!
Australia Day Queensland Ambassador, Pip Russell said one of the best parts of Australia Day was the chance to share a meal with friends and family.
“From the perfect pavlova to a boast worthy barbie or cooking with true blue Aussie bush foods, if you have a great Australian bite that impresses your family and friends, we’d love to see it!” says Pip.
How to Enter the Competition
There are two ways you can participate in the “Your Great Australian Bite” competition.
Option 1 – Showcase your skills
Upload a photo of your unique dish or baking creation to the Australia Day Queensland Facebook Page (You have to do this via the WIN! tab, not just upload it to the page) www.facebook.com/australiadayqueensland

Option 2 – Show your support
If you’re more of a consumer than creator you can simply vote for your favourite looking dish. You can do this via the WIN tab on Facebook or directly on the competition page.
The recipe with the most votes will win a luxury gourmet weekend away to Spicers Peak Lodge in Queensland’s Scenic Rim.
The runner up and four lucky competition voters will each receive a 12-month subscription to Delicious magazine.

My Great Australian Bite: Potato Salad À la Aunty Shirley
Personally, when I think of Australian food I think of summer. Eating mangoes over a sink. Sneaking a Weis bar on a hot day. Prawns on Christmas Day. And summer BBQs, where the side salads are as much the stars of the show as what’s on the grill.
At a recent family gathering my Aunty served up such a delicious potato salad that not only did I go back for thirds, but I bugged her for the recipe so I could recreate it. Look below for the recipe if you want to impress at your next BBQ!
The great thing about potato salad aside, from the carb-ilicious taste, is you can be super flexible and add and subtract what you like. Plus it’s so easy – all you have to do is chop and mix!
This will make enough to easily feed six to eight people. It might not look pretty but it tastes great.

Ingredients
6-7 potatoes, chopped
300g bacon bits or a couple of rashers chopped
1 onion finely chopped (to cook)
1 onion finely sliced (raw)
4 hard boiled eggs, chopped
½ cup whole-egg mayo
½ cup Greek yoghurt
1 teaspoon apple cider vinegar
2 teaspoons wholegrain mustard
1/3 cup gherkins, finely chopped
1 red capsicum
salt and pepper to taste
Method
- Boil your potatoes in salted water for 15 minutes or until tender. You don’t have to peel them, potato skin is extra flavour. While this is happening, hard boil your eggs.
- Set potato and eggs aside to cool slightly before peeling and chopping.
- Cook the bacon and one finely chopped onion together in a frying pan. When you’re happy with how crispy your bacon is, transfer to a bowl.
- Chop up all your other ingredients – the capsicum, sliced raw onion, and gherkins.
- In a bowl combine the mayo, yoghurt, apple cider vinegar and mustard.
- Mix everything in a bowl and season with salt and pepper.
Serve!
