Our city is the birthplace of the humble lamington, and to pay homage to this coconutty wonder, local business Wonders of the Volcano created their signature ‘Toowoomba Created the Lamington’ tea towel.
Now you can win three of these pretty kitchen accessories for yourself by heading to the Wonders of the Volcano Insta or Facebook and leaving a comment about what else you wish Toowoomba had invented. The most creative comment wins!
Wonders of the Volcano is the brainchild of sisters Caitlin Greenhalgh and Sarah Ryan. After many years working independently in the art and design world, the sisters have joined forces to create beautiful things that celebrate their volcanic home, Toowoomba. This year’s National Lamington Day will mark the third birthday of their product range of locally designed and hand printed Toowoomba-inspired linen tea towels.
The sisters say there are various stories about how the lamington was created. However, they like to believe it was devised by Armand Galland, the French chef to Lord Lamington, Governor of Queensland (1896-1901).
Galland is said to have had a Tahitian wife – hence his use of coconut. He created the delicious cakes at the governor’s country residence in Toowoomba. What Lord Lamington lovingly referred to as “those bloody, puffy, woolly biscuits”, we now know as the lamington!
‘Wonders of the Volcano’ has also teamed up with local Toowoomba business, The Bungalow and Basket to celebrate National Lamington Day. On Saturday 21 July, throughout the day, The Bungalow and Basket will be selling the tea towels and offering delicious homemade lamingtons on their menu.
